Sambal Terung - Chili Eggplant

Wednesday night Ibu Wewein cooked sambal terung. Fantastic dish. Requested the recipe.

Ingredients
  • 2-3 eggplant (Japanese)
  • 10 chilies (5 for Australians! These are thin, short, and curly chilies, known here as cabe kerting)
  • 1 red onion
  • 3 cloves garlic
  • 1-2 TS olive oil
  • Palm sugar - sedikit (a little)
Cooking

BBQ the eggplant.

Ground the spices together.

Fry the grounded up mixture.

Pour 1/2 glass of water into the mixture. Bring to the boil.

When boiling, add the sliced eggplant.

Cook until tender (about 10 minutes) and water is reduced.

Serve with rice.
